Peach Bellini
Your recipe is not a Bellini. The real proper one invented in Harry's Bar in Venice, Italy does not use Champagne or Schappes. So whatever this is, it is not a Bellini.

Ghastly Mistake
The real Bellini...as served at Harry's Bar in Venice is composed of fresh white peach juice and prosecco Italian champagne or demi-sec French champagne one fifth part cold juice/ four fifths parts fizzy wine...all very cold chilled flutes the proper glass. Occasionally a 1/3 teaspoon pureed fresh red rasberry to give it a rosy tint.
